I found this recipe when I tried out Timed Nutrition with an online workout program called 80 Day Obsession. I used them as a pre-workout meal at that time, but now I use it more for post workout, to break my fast, and I’ve even made them for dinner! It’s a great way to meal prep because you can make a ton at the beginning of the week for the rest of the week and my son loves them! You can store the extras in the fridge and pop them in the microwave to reheat. There are a ton of ways to make them and you can add your own choice of veggies. I’ve used, green pepper, green and white onions, broccoli, and spinach.
- 2 cups cooked spinach or any combo of cooked veggies. I like to sauté them in avocado oil in the pain while the oven is heating.
- 4 eggs, scrambled
- 1 cup cooked quinoa
- 4-6 slices of bacon or turkey bacon
- 1/2 cup shredded cheddar cheese or cheese of choice (optional)
Heat oven to 375. Line one muffin tin with parchment paper liners (these are THE BEST muffin tin liner around). Cook the veggies with olive or avocado oil in a pan until just soft and add to a mixing bowl. Add all of the remaining ingredients and stir to combine. Fill muffin cups 2/3 full and bake for 22 minutes.
